Organic Whole-Wheat Beer Bread

I love to bake, and I only wished I did it more often.  I remember my mom would always bake homemade bread when I was a kid.  That was the “norm” growing up in Southern Michigan.

But when it comes to baking bread, it can become very time consuming waiting for the bread to rise before baking.  I takes hours from start to finish.  As a busy mom, I just didn’t have the time or patience for this, so I continued buying store bought organic whole grain breads… until now… I am a changed woman since I found out the beauty of baking with BEER!

When using beer, you are adding active yeast and there is no need wait for the bread to rise.  I didn’t research the reasoning behind this, but trusted it all the same… and VOILA! My beer bread turned out amazing!

I tried out this recipe… it took about 3 minutes to prepare and 1 hour to bake… and it was DELICIOUS!  The buttery crunchy crust makes all the difference and the bread was fluffy and moist.  Of course, I choose all organic, because I like to keep it clean… do what you can, when you can!

**NOTE… Sometimes to appease my husband, I will do half whole-wheat flour and half white to make a more “fluffy” and lighter bread.  I double the recipe each time and make 2 loaves… I am in search of smaller pans to make a square loaf, but even when shorter and longer, the flavor is perfection!




3 cups organic whole-wheat flour (sifted)

3 teaspoons baking powder (omit if using Self-Rising Flour)

1 teaspoon salt (omit if using Self-Rising Flour)

1/4 cup organic sugar

1 (12 ounce) can organic beer (I like a Peak Organic Nut Brown personally)

1/4 cup grass-fed melted butter



(1) Preheat oven to 375 degrees.

(2) Mix dry ingredients and beer.

(3) Pour into a greased loaf pan.

(4) Pour melted butter over mixture.

(5) Bake 1 hour, remove from pan and cool for at least 15 minutes.

(6) UPDATED NOTES: This recipe makes a very hearty bread with a crunchy, buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top.

(7) Sifting flour for bread recipes is a must-do. If you don’t, it will turn your bread into a “hard biscuit”. If you do not have a sifter, use a spoon to spoon the flour into the 1-cup measurement.


Luck vs Attraction

Does it feel like some people are just plain “lucky?”   Ever feel you got the short end of the stick? Where bad luck finds you?   You’re doomed for a mediocre lifestyle?

Well… you’re WRONG!   You can change your luck by changing your vibration. Luck is not chance… it’s a by-product of hard work and the Law of Attraction. If you are negative, you only attract more negativity. “Luck” will never find you.  But on the flip-side, if you focus on gratitude for the things you have and the things you are about to receive, you will attract more things to be grateful for!

What you focus on, you find. If you focus on the bad things in your life, more of the bad things appear.  Focus on the good and good things come. But the big question is, “how can you get the negative thoughts to go away when life it tough?”

Answer: PRACTICE!!   Surely it sounds cliché, but practice does make perfect… and we can develop skills in any area of our life, including mindset shift.   No doubt we are all “hard-wired” with a mindset blueprint our parents and guardians uploaded into us as children, but we have “software” all around us to help reboot and change our programming.

So CHOOSE to make an effort. Choose to take 10minutes out of your day to give gratitude, envision your future, and start looking for and embracing the beautiful moments and environment around you. You CREATE your REALITY… so quit the pity-party, quit blaming others, quit snacking in the night, quit hitting the snooze button three times each morning, quit gossiping and JUST START LIVING!  Start making MAGIC!

Dawn of a New ME!

“It’s a new dawn of a new… ME!”

Ever feel like you had that level of YES and COMMITMENT in your life, only to somewhere along the line, lose sight, drop the ball and “fail?”

If so, you are not alone. My husband and I over the weekend determined enough is enough. In areas of our fitness and our businesses, we knew we had MORE to give and more to GROW. We had a “heart to heart” and took time to reassess our WHY. We made a plan, and thus far (day one) we have stuck to it! We realized we needed to stay accountable to each other, to ourselves and to the world we are setting forth to change.

When your “why” isn’t strong enough, the path can get muddy. And a muddy path can make it easy to slip and fall. Keep asking yourself, “Why do I want to be stronger, leaner, more successful, more energetic, more impactful, etc?” And each time you start to deter yourself from your mission, each time you fall flat on your back on that muddy path…. Reconnect with your purpose, and the people you are doing it for (including yourself) and get up, wipe yourself off and start to create a new path. There are many roads to reach one destination. Some have tolls and you really do pay the price, others are more scenic and might distract you with the enticing beauty, but when you keep your eye on the goal and your WHY, you will find the one that is more direct, easier to navigate and well-illuminated and it will bring you to your destination in record time.


Gluten Free / Dairy Free Bread

I often avoid wheat, but it’s only recently that I have been avoiding dairy.  I recently gave birth to a beautiful baby girl and she has a sensitive tummy and gets ultra-gassy from cow proteins… so I have been reading labels left and right.  Dairy is in EVERYTHING!  Even when it comes to bread, so many breads have milk proteins in the ingredients as well.

So I set out to make my own bread… and if I’m gonna take the time to make bread, I am gonna make sure it’s HEALTHY!  Even if you are not “gluten sensitive” and are currently living a gluten free life, it’s a wise thing to avoid- wheat in today’s world is no longer real wheat; it’s all been genetically modified.  And heck, with the way the US feeds their cows and pumps them with hormones and antibiotics, it’s even pretty smart that you avoid dairy when possible too!

I got this recipe from my mom (she sourced it from the “Wheat Belly CookBook” by William Davis, MD).  I made sure to use coconut oil instead of butter and coconut milk instead of buttermilk to make it dairy free…  I hope you like it.

PRE-MAKE THE BAKING MIX.  I triple this baking mix recipe so I know I have 6 loaves “ready for mixing” waiting in the fridge:

All-Purpose Baking mix

4 cups almond meal/flour
1 cup ground golden flaxseeds
1/4 cup coconut flour
2 teaspoons baking soda
1 teaspoon ground psyllium seed

In a large bowl, whisk together the almond meal /flour, flaxseeds, coconut flour, baking soda, and psyllium seed (if desired). Store in an airtight container, preferably in the refrigerator.

Per 1 Tablespoon: 40 calories, 2g protein, 2 g carbohydrates, 3 g total fat, 0 g saturated fat, 1 g fiber, 33 mg sodium.

Sandwich Bread

Prep time: 5 minutes/ Total time 45 minutes

3 cups All-Purpose Baking Mix
1 teaspoon aluminum-free baking powder
1/2 teaspoon sea salt
5 eggs, separated
1/4 cup coconut oil, melted
1 tablespoon coconut milk (canned or carton variety)

Preheat the oven to 350 degree F. Grease an 81/2 x 41/2 loaf pan (I use Earth Balance Vegan non-hydrogenated margarine to grease the pan).

In food processor, combine the baking mix, baking powder, and salt. Pulse until well blended. Add the egg yolks, coconut oil, and coconut milk. Pulse until blended.

In a large bowl, with an electric mixer on high speed, beat the egg whites until soft peaks form. Pour into the flour mixture and pulse until egg whites are evenly distributed.
Do not run the machine at a constant speed.

Spread into the pan and bake for 40 minutes, or until a wooden pick comes out clean.

Per slice: 174 calories, 7 g protein, 6 g carbohydrates,15 g total fat, 4 saturated, fat, 3 g fiber, 234 mg sodium.


The Voices in Your Head…

The biggest problem people face when starting their own business is being able to turn off the voices inside their head.

10 Reasons NOT to Drink Coffee

As a nutritional cleanse-coach, most people don’t even question omitting alcohol from their diet to become healthier, but I am always asked “WHY? Do I have to stop drinking coffee?”

Let me explain… Not all caffeine is created equal.  So I urge my cleansers to drink tea instead of coffee (preferably green tea).  Bioactive caffeine is fine, which is found in green tea, black tea, yerba mate, guarana and kola nut.  But the caffeine in coffee is considered dead.  And this dead caffeine is a central nervous system stimulant that has terrible side effects: it is followed by a depressed phase involving exhaustion, nervousness, irritability, fatigue, and often headaches.

The toxicity of coffee/caffeine can become very apparent when trying to remove this stimulant from your diet. The withdrawal symptoms of detoxification alone should clue you into how terrible it is for your body. Common symptoms include headaches (caused by sudden increase circulation to the brain when blood flow is no longer constricted), fatigue, sleepiness, lethargy, irritability, depression, muscle pain and stiffness, and sometimes even flu like symptoms. The narcotic effect of this caffeine is so powerful that its influence is abundantly clear when the addict reintroduces this stimulant and all symptoms vanish.

Also coffee has the most pesticides of any food on this earth. So let’s be clear- I’m not saying it has traces of pesticides, I’m saying you can’t find any other plant in the world that has a higher toxicity of pesticides than coffee. It is so heavily treated with chemicals and fertilizers that it is even proving deadly in crop workers in many countries. Studies have shown over a thousand chemicals in coffee! 10 reasons to not drink coffee

Here are the facts you should know about what really happens when you drink coffee:

1. Numerous studies link coffee to calcium loss contributing to osteoporosis, and more bone fractures. Calcium is robbed from your bones to neutralize every time you consume something acidic like coffee.

2. Coffee makes you acidic.  A healthy body maintains a blood pH of around 7.3. Coffee is 25.1 on the acidic scale.  All disease is promoted in an acidic environment and your health goal should be to create an alkaline body.

3. Decaffeinated Coffee is just as bad as and even more acidic than regular coffee. Most Decaffeinated Coffees are processed with formaldehyde, which is one of the most toxic substances to humans. Even in small amounts, formaldehyde can cause serious health problems and unfortunately takes years to finally dissipate.

4. Coffee dehydrates you and raises your cortisol levels (aging you more rapidly).

5. Coffee is another way to borrow energy from the future, but crashes you in the end.

6. Heating the coffee bean creates the chemical Methylglyoxal, benzopyrene, and chlorogenic atractyosides. A 1981 study from the Harvard School of Public Health concluded that drinking coffee was the cause of half of all pancreatic cancer cases.  It also found that drinking three cups of coffee a day increased your risk of pancreatic cancer by three times.

7. People who drink too much coffee often have difficulty getting rid of chemicals from their bodies, and their liver function is off. Caffeine just isn’t that easy to digest. To break down the coffee you ingest and deliver that burst of energy to your blood stream, your liver uses enzymes. If all of your enzymes are hard at work within your liver trying to break down the caffeine, they aren’t ready and active in your blood to knock out other bad chemicals it needs to get rid of.

8. It takes 64 ounces of water to neutralize one 8 ounce cup of coffee.

9. Caffeine is also blamed for eliminating your feelings of being happy, as it kills the neurotransmitters in your body. Your brain won’t be able to produce enough of these happy chemicals with lower neurotransmitters. People who are depressed are often lacking in a hormone called serotonin, which keeps you feeling good and satisfied. Caffeine is actually one of the main suppressants of serotonin, so steer clear of coffee if you suffer from depression or are feeling a little down in the dumps. While most people believe that coffee will lift them up, in the long run, it pulls them down.

10. Caffeine slows down your body’s ability to absorb vitamins, minerals, and other valuable materials, which are vital for your health, drinking too much caffeine can actually cause your body to be unable to take in some of the very valuable ingredients you are feeding it. As an example, coffee can limit your holdings of iron by more than fifty percent. So besides the fact that this is bad for your health, if you are working hard to get all the necessary vitamins and minerals into your diet (by eating alone or through expensive multi-vitamins), you are simply throwing your money out the window.

I know what you’re thinking; “just one cup a day is not doing damage”, right? The accumulative affects of drinking a cup a day is still unhealthy, just as smoking a cigarette a day is seriously unhealthy.

If it’s about the caffeine pump, choose bioactive caffeine like green tea or yerba mate.  If you are addicted to the taste of Coffee, try an alternative to drinking coffee, Teeccino. Teeccino is an herbal coffee, made of roasted carob, barley, chicory root, figs, dates, orange peel and almonds. It is delicious and tastes similar to coffee. You can find it at most health food stores such as Whole Foods or Trader Joes. Teeccino comes in many flavors.

Guilt-Free Snack: Baked Kale Chips

One of the most addictive things about the not-so-healthy snack of potato chips is the crunch and the salty or zesty flavor.  I have gotten very addicted to a delicious and VERY nutritious alternative for a crunchy and salty snack, packed full of nutrients.  Along with amazing anti-oxidant and anti-inflammatory properties, kale helps the body’s detoxification process as well.

Here is a quick nutrition chart of cooked kale:Kale NutrientsKale can be steamed, sautéed, eaten raw, blended into juices/smoothies or one of my favorites: BAKED KALE CHIPS

Here’s the recipe I use…


  • 1 bunch of organic kale
  • 1 TBsp of Olive Oil (I use a MISTO spray can filled with olive oil to save on more calories)
  • 1 tsp of seasoned salt (I use Savory “Mt Elbert All-Purpose Seasoning”)

The easy steps:

1. Preheat oven to 350 degrees F (175 degrees C)  Line a non-insulated cookie sheet with parchment paper.

2. With knife or kitchen shears, carefully removed the leaves from the thick stems and tear into bite-sized pieces.  Wash and throughly dry kale with a salad spinner or dabbing with paper towel.  Spread onto lined baking sheet in one thin layer.  Drizzle kale with olive oil (or mist with a MISTO spray) and sprinkle with season salt.

3. Bake until edges brown but are not burnt, 10-15 minutes depending on your oven.  (I do 10-11 minutes in mine and rotate 180 degrees at 5 minutes)

Kale prep     kale prep 2Take caution!  Be sure to keep an eye on the Kale near the end of the bake time.  They are delicate and even 30 seconds can burn them or turn them into a brittle mess… So start keeping an eye at 10 minutes and based on the heat of your oven, they may need a little longer.

baked kale chipsAnd GET CREATIVE… sometimes I squeeze on fresh lemon and dust with cayenne pepper or chili pepper.  Also I enjoy just good ol’ sea salt as well 🙂

Would You Rather be a Bowling Ball or a Beach Ball?

In my experience as a personal trainer, I have had plenty of these conversations with my clients… especially women!  As you start to train, change your diet and start living a healthy lifestyle, surely the scale will drop and you will be numerically seeing the success.  Then we hit plateaus and even see it fluctuate.  But don’t let the scale run your results.  Use the measuring tape!

I had a client who was on a 30-Day Program with me.  She was committed to training 6 days per week.  We were weighing in and taking measurements every 7 days.  For the first 3 weeks, the scale was dropping, inches were coming off… and on the very last day of the month, the scale went up and she freaked out!  Although the scale went up, her measurements still went down.   She was 2 lbs bigger on day 30 than she was on day 1, but she was 2.5 inches smaller in her waist and 1.5 inches smaller in her lower abdominals not to mention the shrinkage of her thighs, hips and arms.

Let’s get one thing clear here… muscle weighs more than fat.  On the flip side, 5lbs is 5lbs no matter if it’s muscle or fat.  But 5lbs of muscle is much smaller than 5lbs of fat (see image).  And women do not naturally have a high muscle to fat ratio, so while doing intense strength training and fueling with proper protein, lean muscle is increasing and the scale might fluctuate.   Try not to get hung up on the scale, use the measuring tape and how your clothes are fitting for better and more accurate representation of your results.


Depending on what you ate the night before, how much water you consumed or if you released your bowels even makes a difference on that scale!  Did you realize your large intestine could store up to 5-10lbs of feces per foot (and the large intestine is actually the length of how tall you are and the diameter of your wrist).  Clearly if you ate some red meat or anything that is hard to digest, you could see the scale be up a couple pounds based on a backed-up colon alone.

An 8lb bowling ball is between 8-8.5 inches in diameter.  A beach ball weighs next to nothing (maybe l to 2lbs at best) and it 14-16 inches in diameter.  So again… I ask you: “would you rather be a bowling ball, all tight, firm and maybe a little heavier… or a light-weight beach ball all puffy and soft?”

Spicy Chicken Sausage Soup

Spicy Chicken Sausage Soup

I was intending on making chicken soup for this afternoon, but come to find out the Whole Chicken I roasted 2 days ago got devoured to the bone… the empty carcass left me with very little soup meat!  I had already bought the fixings, so I got creative and found a package of Trader Joe’s Spicy Jalapeño Sausage in the freezer.  I switched up my ingredients list and went to work on a SPICY SOUP! My husband absolutely loved it…

Spicy Chicken Sausage Soup

The Ingredients:

2- 32oz containers of Organic (Free Range) Chicken Broth

1- package Trader Joe’s Spicy Jalapeño Chicken Sausage sliced once lengthwise, then cut into 1/2 inch slices

5- cloves organic garlic, chopped

1- standard sized yellow onion, chopped

4- organic whole carrots, sliced

2- large stalks organic celery, sliced

1/2- OR- 1 tsp Pink Himalayan salt (to your taste)

1/2 tsp black pepper

1/2 tsp dried oregano

1 tsp dried basil

1 tsp dried parsley

1- small butternut squash, peeled and cubed (if only a large one is available, use about 2/3 of it)

**** Organic fresh spinach to stir into each bowl just before serving (optional)


The Order:

Start by bringing the broth and chicken sausage to a boil (then bring down heat to a slow boil). As you are waiting for the broth to boil, prep the squash as it takes the longest to peel and chop and set it aside.  Starting with the garlic… peel, chop and add it to the pot.  Then move to the onion, peel it, chop and add… Continue prepping and adding each ingredient in the order it is listed… once you have added everything, simmer until the squash and carrots are “done” to your liking.

Serve hot and stir in fresh spinach to each bowl before serving.

The butternut squash gives a refreshing sweetness to the spicy broth… beware it has a kick!


Be Your Own Boss: Do You Have What it Takes?

Many people sit back and dream of working for themselves… quitting their day job and being their own boss.  But not everyone is designed to be an entrepreneur.

I am accountable to my schedule: Are you willing to work without someone asking you to “show up”.  If you want to be your own boss and have the self-discipline to get the work done… you might be an entrepreneur!  I won’t be your boss- but I can be your business partner; I can guide you, but I cannot do the work for you.  There are people to help you learn, help you stay motivated, but in the end it’s all up to you to get the work done.

I enjoy working with others/I am a people person:  If you are good at connecting with others and enjoy the art of connection… You might be an entrepreneur.  You cannot grow in business if you do not have the willingness to “network”.

I am coachable:  If you do not already have all the skills to become a leader and the CEO of your own company, are you willing to learn and be coachable?  All skills necessary for success can easily be acquired through practice… like any good skill.  If you are willing and open to personal growth… you might be an entrepreneur!
